This is the home of From Pasta to Paleo and I’m Leslie, a carb-loving, slightly awkward stay-at-home mom/professionally trained cook on hiatus trying to change the way my family of three eats. My background is in Italian cooking, my most recent cooking gig was as a pasta maker. I trained in Italy, in a tiny town at a fantastic michelin starred restaurant, La Palta, and was taught to make kick ass pasta. This site is the journey of my family to move into a healthier way of eating and the collection of recipes, meal-plans and resources I have used along the way.
