day five: slow roasted tomatoes

Roasting tomatoes when they are out of season (I know, I know) is really the only way to enjoy them. They are sweet, rich and caramelized deliciousness.I take some local (greenhouse) tomatoes, slice them, add a bit of garlic, kosher salt, pepper, herbs and the tiniest drizzle of balsamic and pop them in the oven at about 325 for 1.5 hours.Tonight I threw them in the oven and had a relaxing bath, they don't need babysitting, so throw them in whenever. Roasted tomatoes are the perfect condiment for eggs, as a side with dinner, or puree them into a rich soup. On the whole30, these are a lifesaver.
