I am tired tonight. Toddler exuberance and not eating a super balanced lunch left me totally zapped. I didn't want to make dinner, I was going to make a horrible meal of chicken thighs and boring sweet potatoes but instead had a bath, relaxed and then made some beautiful pastured pork chops and a sweet potato hash with red and yellow peppers, onions and herbs. The hash was delicious and just might be the vegetable solution to my breakfast woes. Poach an egg and let the oozy yolk pour over the hash - that's a good breakfast.
lunch: tore apart a cooked chicken, roasted tomatoes, mini leftover burger
dinner: pan roasted sage pork chop, sweet potato hash
