day nine: beef carnitas

Boring old pot roast. That was our fate until I thought - hey, if I make carnitas out of tough cheap cuts of pork, why can't I do that with a bottom blade pot roast? Oh, I can. And it was crunchy, spicy and deeply satisfying. When I make carnitas, I usually combine the recipes of David Lebovitz and smitten kitchen and get an orangey, spicy, crispy meat experience that I would serve to any dinner guest. We topped it with whole foods fresh mango salsa and homemade guacamole all wrapped up in yet another lettuce leaf.
