Turns out we really like lettuce wrapped tacos. We grilled lime and jalapeno seed quick marinated salmon and whitefish and topped them with guacamole, fresh mango salsa and that crazy good morita salsa from mad mexican. A fresh, summery meal for a beautiful evening.
3 ripe avocados
1 jalapeno pepper, diced
1/2 red onion, diced
1 tomato, seeded and diced
1 clove garlic, smushed
1 lime, juiced
handful of cilantro, rough chopped
salt, generous pinch, to taste
Add all ingredients to a bowl/wide mouth mason jar/molcajete and smush with fork until desired consistency (I like mine a bit chunky). To keep for later, make sure to put a layer of plastic wrap directly on the top of the guac so it doesn't oxidize, sometimes I add a squeeze of lime to keep it looking fresh.
