Dreary days call for beef stew. Problem is, I didn't have any beef stew or stock to make dreary day beef stew. I have been on the hunt for a whole30 appropriate boxed stock for 17 days, every single stock at all the major chains and health food stores has either sugar or for organic boxes, 'evaporated cane juice' , which is really just sugar with a deceptive name.
I am a trained cook, I can make my own stock but with 75% of our life in a storage pod while our renovation chugs slowly along, I do not have a stock pot or the desire to make our tiny rental into a beef sauna. I went into one of the most expensive (and local) Toronto butchers, Cumbraes, and was able to buy 1 litre of frozen beef stock for $5.99. Though expensive it is 1000% better than conventional and 1000% preferable to a beef facial.
1 tbsp coconut oil or ghee or olive oil
1 lb grass-fed stewing beef
1 large yellow onion, diced
2 cloves garlic, smushed
227 g cremini mushrooms (1 standard container)
1 bay leaf, fresh preferred
1 sprig rosemary, fresh preferred (thyme would be great as well)
1 tsp cinnamon
2 tbsp tomato paste
1 litre beef stock, homemade or no sugar store bought
2 carrots, peeled and cut into 1/2 inch chunks (or any size, but be consistent with all the root veg)
1 parsnip, peeled and cut into 1/2 inch chunks
1 medium sweet potato, peeled and cut into 1/2 inch chunks
2 small turnips, peeled and cut into 1/2 inch chunks
salt & pepper, to taste
italian parsley, rough chopped, if you'd like - to garnish and brighten up finished stew
Using a heavy bottomed pot, heat up coconut oil until glistening. Sear beef, seasoned with salt & pepper, until crusty browned.
Remove beef and add onions, garlic, bay, cinnamon, rosemary and let sweat for 5 minutes. Add mushrooms, after a few minutes, add tomato paste and let cook out for a few minutes. Add 1/2 cup of beef stock to deglaze the pan and get all the crusty bits off the bottom. Add all of the root vegetables and beef. Pour the remaining beef stock, season with salt & pepper, stir and simmer for 2 hours until the beef becomes tender.
When serving, top with a bit of italian parsley, if you'd like.
