day nineteen: saturday in the city & pork pineapple skewers

Saturday in the city is one of life's great joys. An early start at one of the many farmers markets to pick up 30 lbs of pastured pork and grass-fed beef, followed by a detoxifying birthday celebration at Body Blitz spa, a rooftop BBQ and a 9:30pm bedtime makes this Saturday one of the best in recent memory. Waking up at 2am and feeling as though I've slept a full nights sleep and still sleeping for 5 more hours is pure bliss. I've removed the toxins from my food, so it only makes sense to detoxify my body at the spa, right? A day at the Body Blitz spa in the restorative waters was so luxurious and necessary for my weary toddler carrying body. My sweet cousin threw a mostly whole30 approved rooftop BBQ for the three whole30'ers attending - isn't that sweet? She brined the pork overnight in a salt solution to ensure maximum moistness and grilled it on skewers with red onion and pineapple, it was like having a Hawaiian pizza without all the bread!

1.25 lb pork loin roast, fat on, cut into 1.5 inch cubes
3 tbsp kosher salt
2 bay leaves
1 tbsp whole peppercorns
1 tbsp allspice berries
1 tbsp cumin seeds
3 cloves garlic, chopped
1 pineapple, peeled, cored and cut into 1.5 inch cubes
3 red onions, each cut into 1.5 inch pieces or sixths
kosher salt & fresh ground pepper
olive oil, drizzle
8 wooden skewers - soaked for an hour pre-skewering

To create brine, combine water, salt, bay leaves, peppercorns, allspice, cumin, garlic and 1/4 of the pineapple in a large container with a lid - stir and add pork. Cover and refrigerate overnight or for a minimum of 4 hours.

Next day, remove pork from brine and using pre-soaked skewers, thread pork, onions, and pineapple alternating until skewer is full. Repeat with all 8 skewers. Season with salt & pepper and a drizzle of olive oil.

With BBQ at medium-high heat, grill skewers for about 12 minutes, ensuring pork is fully cooked. Turn every so often to prevent pineapple from sticking to the grill.
