day twenty: prosciutto wrapped chicken

Happy Father's Day to all you wonderful Dads out there! In honour of fathers day I made a real breakfast, followed by a real lunch that my husband didn't eat because I let him loose in the world without us - what a gift! Though he could have taken some with him because these chicken strips are a great paleo snack or lunch box addition.

prosciutto wrapped chicken

3 chicken breasts
6-8 slices prosciutto
herbes de provence, sprinkle
pepper, sprinkle
olive oil, drizzle

Preheat oven to 350F. Slice chicken in strips. Sprinkle with pepper and herbes de provence. Wrap each strip with a half slice of prosciutto, winding it around the strip. Place strips on baking tray, drizzle with olive oil and cook chicken strips for about 20 minutes.

note: this is such an adaptable recipe - change the herbs or use fresh if you'd like.
