day twenty-one: lemon pepper homemade mayo

Julia Child is the grande dame of French cooking in North America, her books are a fantastic resource for well-trained cooks as well as beginners. If you don't own a copy of Mastering the Art of French Cooking, that's a pity. All of my cookbooks (see below) are in our storage pod, so I did a quick google search for her wonderful mayonnaise recipe and found it at one of my go-to sites, the Kitchn. Her instructions are spot-on and produce a fantastic mayo with great flavour and the perfect texture. I amended the Julia/Kitchn recipe by using light olive oil and adding 1 tbsp lemon zest, 1/2 tsp fresh ground black pepper and an extra 1/2 squeezed lemon. I'm looking forward to making tuna salad with this mayo for lunch tomorrow!
