Don't worry, I haven't abandoned the whole30 - we went on a suburban retreat this weekend, aka - the in-laws house, to bask in the sun and splash in the kiddie pool. We grilled to our hearts content - walnut-fed boar sausage, grass-fed burgers, and sweet potato fries. These days we don't have easy access to a BBQ, so we oven-roast our sweet potato fries. The trick to sweet potato fries is for the potato to be very dry, wash them earlier and let them dry off completely. Another trick, just a teensy bit of olive oil and a super hot oven. We can't go over 375F in our rental condo or the fire alarm goes off, if we lived without the threat of firemen showing up at our door, I'd go for 425F.
sweet potato fries
3 sweet potatoes, cut in half and then lengthwise into thick fries
2 tbsp olive oil, a drizzle
1 tsp ancho chili powder
1 tsp smoked paprika
1/2 tsp cayenne (add more or less depending on desired heat level)
1 tbsp kosher salt
1/2 tsp black pepper
2 tbsp herbes de provence, or fresh rosemary/thyme
Preheat oven to 425F.
Combine sweet potatoes, spices, herbs and olive oil in a bowl. Place on rimmed baking sheet - do not overlap fries, use two sheets if necessary.
Cook in heated oven for about 25-30 minutes - carefully flipping each fry halfway through cooking time.
Once out of the oven, season with salt and a sprinkle of fresh herbs - if you used them.
