Sometimes a lady needs a bit of chocolate in her life. After finishing the whole30, I haven't wanted to eat something very sweet, just a bit chocolatey. I love the bitterness of cocoa and the sweetness of coconut together, so I threw together these super simple snack bars.
cocoa for coconut snack bars
1 cup pitted medjool dates
1 cup pecans
1 cup unsweetened coconut flakes
1 tbsp vanilla
2 tbsp unsweetened cocoa powder
1 tbsp coconut oil
2 tbsp water
Using food processor, blitz the dates until they are pureed. Add in remaining ingredients and process until everything is combined and in tiny pieces.
Press mixture into an 8 inch square pan, cover and refrigerate for about an hour, or until hardened. Cut and enjoy!
