This recipe is for all the mom's out there that want a healthy snack for their kids that isn't chock full of sugar. My toddler is nuts for this pudding - throughout the winter I used the super rich pudding base (without chia) as a fake-out for hot chocolate mix - just add your warm milk of choice to 1/4 cup of pudding and you've got a healthier hot chocolate. I love this coconut cocoa mixture so much that when I make it I covertly lick the bowl while telling my toddler he can't have any pudding because its not ready yet. Mean mommy needs her chocolate fix, hands off!
cocoa banana chia pudding
1 can coconut milk
2 ripe bananas
3 heaping tablespoons cocoa powder
2 tbsp almond butter (any nut butter will do - or none!)
1 tbsp vanilla
2 tbsp honey (or coconut sugar, maple syrup)
3/4 cup chia seeds
Combine all ingredients except the chia seeds into a measuring cup with a spout. Use an immersion blender to blend until smooth. Pour pudding into 6 individual mason jars or other lidded containers. Add 2 tbsp of chia seed to each jar, put the lid on and shake. Place in fridge until set and cold, about 3 hours.
