Fresh peas were not on my seasonal eating hit-list. Heirloom tomatoes and asparagus have always won my heart over peas. At our local vegetable shop I saw a bag of unshucked peas, their vibrant green shells and wispy tendrils taunting me to give them just one more try. So, I made this recipe for fresh peas and mint cilantro vinaigrette. It blew my mind. The fresh greenness of the peas is the epitome of spring. How could I have been so wrong about peas?
Fresh peas topped with mint cilantro vinaigrette are an elegant and incredibly easy way to eat fresh peas. Pairing peas with a fresh mint, cilantro and chive vinaigrette lends a triple zing of herby freshness that suits the vibrant flavour of peas. This vinaigrette is so versatile and works perfectly on any green vegetable or frozen peas all year round. A lifetime of pea apathy is a tough challenge to make up for in one season but I think I’m up for it. Bring on the peas!
