I looooooove ooey gooey cream cheese filled, bacon wrapped jalapeno poppers. I would choose them over the fanciest of appetizers any day of the week. Except for one thing. The cheese. It doesn’t make me feel great. Cue the sad music. When I noticed cashew cream ‘cheese’ popping up in cheese aisles all over the place, my very first thought was, yaaaas! paleo jalapeno poppers!
Filling a jalapeno with cashew cream cheese and covering them in bacon is a bit of a vegan nightmare, right? I do apologize to all my vegan friends but you’ve created such a lovely product, I just couldn’t help myself. If you’re being really thoughtful, you can leave the bacon off for your vegetarian friends. The poppers will be melty and delicious with the cheese and roasted jalapeno – I mean, who doesn’t love a roasted pepper?
Cashew Cheese? What’s the Deal with that?
I’m pretty new to the cashew cheese game, but a dairy-free, spreadable, not super weird tasting cheese alternative is extremely appealing. Cashew cheese is made out of…wait for it, cashews! The cashew cheese is made by soaking cashews in water for a time and then given a whirl in a food processor with nutritional yeast, garlic or your chosen flavorings and salt. Sounds easy, but I’m all for trying to find delicious shortcuts where I can so I’ll keep on buying mine! For this recipe, I used Yoso cashew cheese but there are a lot of other brands I hear great things about like Kite Hill and Zengarry.
Where do I find Paleo bacon?
When you’re shopping for bacon, you want to look for a bacon without a ton of sugar and additives. Pederson’s Farms makes the most popular paleo and Whole30 bacon in North America. They make a minimally processed, Whole30 approved, sugar-free, nitrite and nitrate free bacon available at Whole Foods and many other organic and natural grocers. You can look here on their website to find it near you, or buy online, you lucky Americans!
