My kindergartener is a bit of a taskmaster. Although his tasks are mainly playground and gelato based, he wants to participate in them all-of-the-time. After surviving the bleak winter, it’s nice to be outdoors but it’s very hard to eat properly and be out in the world for most of the day. Gelato is tempting, gluten-free cookies are everywhere, and nary a good salad can be found in my neighbourhood which leads me to the imminent purchase of a small insulated lunch bag and some serious picnic recipe development.
This picnic-friendly spiralized cucumber sesame salad is a riff on a soba noodle salad I used to make way back when I had a horrible bank job and the only bright part of my day was my precious 30-minute lunch break. Rice wine vinegar is acceptable in our household but if it bothers you, substitute coconut vinegar. This salad keeps fairly well for a few days in the fridge and is a bright and tangy side for grilled salmon or seafood.
How is rice wine vinegar Whole30 compliant?
Almost all vinegar is allowed during the Whole30 with the exception of malt vinegar, which contains gluten. Rice wine vinegar, also known as rice vinegar is made from fermented rice that essentially transforms into an acid/vinegar and is considered safe. Watch out for seasoned rice wine vinegar though, it contains added salt and sugar! If you have trouble finding rice wine vinegar, you can use coconut vinegar.
