5 Secrets to Crispy Sweet Potato Fries

You’ve made sweet potato fries and you’re excited to try them until you bite into one – it’s mushy, soggy and extremely disappointing. Has this happened to you? With my 5 secrets for oven baked sweet potato fries it won’t happen again.

Crispy sweet potato fries are the foundation of our paleo-ish house. Sweet potatoes are packed with vitamin A and are a fantastic source of paleo-friendly carbohydrates. When you’re missing a starchy carb to round out your meal, whip up sweet potato fries and dip them in your favourite sauce, ours is homemade lemon pepper mayonnaise. What’s yours?

Have you wondered why store-bought frozen sweet potato fries are so crispy?  The store-bought sweet potato fries get their crispy outer coating from sugar and starchy additives. Instead of sugar and starch I use herbs and spices to punch up the flavour and good cooking techniques to create crispiness. #1 DRY FRIES

Start with dry sweet potatoes. If this means rinsing them off earlier or not at all (I won’t judge!), start with a dry potato.

#2 CUT EVENLY

Even cuts make for even cooking time. Now I know you’re thinking – sweet potatoes aren’t square – how can I make them even? Never fear, my sweet potato loving friend, they don’t need to be perfectly even but approximately the same thickness and length to ensure a consistent bake on all the fries.

#3 LIGHTLY OIL + SEASON

Choose a neutral flavoured oil such as avocado oil.  Use a small amount of oil (2 tbsp) and season your fries with salt and spices. I love the smoky blend of ancho chili powder, smoked paprika and cayenne. Put your fries in a mixing bowl or plastic storage bag, add oil, salt, and spices and use your hands to mix and coat the fries evenly.

#4 EVEN LAYER

Place the fries on a rimmed baking sheet in one layer. Don’t let the fries overlap. This will make sure the entire surface of each fry gets baked evenly.

#5 HOT OVEN

High heat 425F makes those fries bake nice and crispy.  Cook for 30 minutes and flip the fries halfway between.

Instructions
  1. Preheat oven to 425F.
  2. Combine sweet potatoes, spices, herbs and olive oil in a bowl. Place on a rimmed baking sheet - do not overlap fries, use two sheets if necessary.
  3. Cook in heated oven for about 25-30 minutes - carefully flipping each fry halfway through cooking time.
  4. Once out of the oven, season with salt and a sprinkle of fresh herbs - if you used them.
