5 Secrets to Crispy Sweet Potato Fries
#1 DRY FRIES
Start with dry sweet potatoes. If this means rinsing them off earlier or not at all (I won’t judge!), start with a dry potato.
#2 CUT EVENLY
Even cuts make for even cooking time. Now I know you’re thinking – sweet potatoes aren’t square – how can I make them even? Never fear, my sweet potato loving friend, they don’t need to be perfectly even but approximately the same thickness and length to ensure a consistent bake on all the fries.
#3 LIGHTLY OIL + SEASON SWEET POTATO FRIES
Choose a neutral flavoured oil such as avocado oil. Use a small amount of oil (2 tbsp) and season your fries with salt and spices. I love the smoky blend of ancho chili powder, smoked paprika and cayenne. Put your fries in a mixing bowl or plastic storage bag, add oil, salt, and spices and use your hands to mix and coat the fries evenly.
#4 EVEN LAYER
Place the fries on a rimmed baking sheet in one layer. Don’t let the fries overlap. This will make sure the entire surface of each fry gets baked evenly.
#5 HOT OVEN
High heat 425F makes those fries bake nice and crispy. Cook for 30 minutes and flip the fries halfway between.
